Fusion Cuisine
“Fusion Cuisine" is a fairly modern term. It was first applied to the creations of well-known chefs who conceived of a new, multi-cultural gastronomy in which elements from different continents (usually Europe and Asia) would be “fused” together. The term “nouvelle cuisine" had already been taken, and that fad had passed away. So the food critics adopted "fusion," by metaphor to a type of jazz, which is not merely a mixture of influences, but a wholly new impression arising out of them. In Acapulco, many of the most elegant fine dining restaurants in town offer “fusion cuisine.” In this case it is often not just a combination of tastes and textures from the Asian Pacific and the European Atlantic, but also from the Mexican Pacific as well.
